Celebrate St. Patrick's Day with some magically delicious Lucky Charms Cookies!

Baking holiday treats together isn't just for Christmastime. These Lucky Charms Cookies are made with marshmallows from the cereal, which makes them the perfect treat to share on St. Patrick's Day! This is such a quick and simple recipe that the kids will love helping with. Not only are these cookies adorable, but they really are a "magically delicious" treat to share at home and at parties!

Use a hand mixer or stand mixer and a mixing bowl to combine the ingredients to make the cookie dough. Once mixed, the dough should be quite soft and light in color. If it seems too sticky, you can add a little bit of flour to the mixture.
Lastly, carefully fold Lucky Charms marshmallows into the dough. To keep the cookies from spreading too much while baking, I would recommend chilling the dough for 30 minutes before baking.

Use a medium cookie scoop and roll the dough pieces into balls and arrange them a few inches apart on a baking sheet lined with a silicone mat or parchment paper.

Bake the cookies for 8-10 minutes, when the edges are a lightly golden. For a chewy cookie, do NOT overbake! Let the cookies cool on the baking sheet for 3-5 minutes, and then move the cookies to a wire rack to finish cooling.


Lucky Charms Cookies
Servings: 24 cookies
Prep Time: 10 minutes
Bake Time: 8-10 minutes
Ingredients:
- ¾ cup butter, softened
- ¼ cup granulated sugar
- ¾ cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ¾ teaspoon baking soda
- 2 cups + 2 Tablespoons all purpose flour
- 1 ¼ cups Lucky Charms marshmallows
Directions:
- Preheat the oven to 350º F.
- Line a baking sheet with a silicone baking mat or parchment paper and set aside.
- In a large mixing bowl, mix together sugars, egg, and vanilla extract until well combined.
- In another mixing bowl, whisk together flour, salt, and baking soda.
- Add the dry ingredients into the wet and mix until combined.
- Fold one cup of the Lucky Charms marshmallows into the dough until just combined.
- Use a cookie scoop to add balls of dough to the lined baking sheet, spaced about 1-2 inches apart.
- Press the remaining marshmallows onto the tops of the cookies.
- Bake cookies for 8-10 minutes until edges are golden brown. Do not over-bake.
- Allow the cookies to cool on the baking sheet for 3-5 minutes.
- Transfer the cookies to a wire rack to cool completely.
Storage:
- Cookies are best eaten the same day, but can be stored in an airtight container for up to 3 days.
- Freeze cookies for up to 3 months in an airtight container.
