These easy-to-make French Toast Breakfast Sliders are a delicious way to start your day!
Breakfast is my favorite meal of the day! As Ron Swanson once said, "There has never been a sadness that can't be cured with breakfast food." These French Toast Breakfast Sliders combine French toast, sausage, eggs, and bacon (the best of all of the breakfast foods) into one satisfying, portable sandwich. The sliders are quick and easy to make, and are a great option for parties, brunches, or breakfasts to feed a crowd.
French Toast Breakfast Sliders are so easy to make, and are the perfect mix of sweet and savory! Here is what you'll need:
- Slider Buns: I prefer to use Hawaiian Sweet Rolls for this recipe, but any slider buns will work.
- Sausage: The first layer of the slider is sausage, and I would highly recommend using breakfast sausage for this recipe (not Italian sausage). If you don't like sausage, you omit it or substitute with ham or Canadian bacon.
- Eggs: The next layer is scrambled eggs. You can use any type of eggs that you like, and you can bake them instead of frying them up to make prepping easier.
- Bacon: Any type of bacon will work great in this recipe. I used microwave bacon, but you can definitely use traditional bacon or turkey bacon.
- Cheese: This ingredient is optional, but sharp cheddar cheese is always great when paired with breakfast sausage, eggs, and bacon! You could also use Swiss, provolone, or even pepper-jack cheese.
- French Toast Mixture: combine milk, egg yolks, heavy cream and cinnamon to brush over the rolls for a hint of French toast flavor.
Before building the breakfast sliders, you need to pre-cook the breakfast ingredients. Start by shaping the breakfast sausage into roll-sized patties and cooking them up in a frying pan. Once cooked, arrange the patties on the bottom half of the rolls.
Next, cook the eggs. To add extra flavor, you can scramble the eggs in the same pan with a little bit of excess sausage grease. You can also add shredded cheese to the scrambled eggs. Another option for cooking the eggs is to bake them! Whisk the eggs together, and then bake them in a lined baking dish until the eggs are set. Not only is this easier, but the eggs will fit over the rolls perfectly (and all in one piece).
Lastly, top the eggs with cooked strips of bacon. I found microwaved bacon to be the easiest, but you can cook it however works best for you.
The final step is to give the rolls the French toast treatment! After combining the milk mixture, generously brush it over the top of the rolls and give it a few minutes to absorb. I also prefer to brush the bottom half of the rolls with the mixture as well for a stronger French toast flavor all the way through the sliders. You don't want to pour it on or add too much, otherwise the bread can become soggy.
Bake the sliders at 350º to warm all of the layers up and to lightly toast the bread.
Remove the sliders from the oven, and slice the rolls into individual sandwiches. The sliders are best when served hot, right out of the oven.
For some extra sweetness, I definitely recommend topping the sliders with a drizzle of maple syrup! It doesn't make it too sweet, thanks to the contrasting savory flavors to even it all out.
This is a great recipe that can also be prepared ahead of time! To do this, assemble the sliders as directed in the recipe, but skip the French toast mixture. Store the sliders in an airtight container and refrigerate for up to 24 hours. Before baking, allow the sliders to warm up to room temperature, which takes about 30 minutes. Brush the rolls with the French toast mixture and then bake as directed.

Ingredients:
- 1 pack of Hawaiian rolls
- 1 lb breakfast sausage
- 6 eggs
- 2 oz microwave bacon
- 1 cup of milk
- 3 egg yolks
- 1 cup of heavy cream
- 2 Tbsp cinnamon
- Maple syrup for topping
Directions:
- Preheat oven to 350℉.
- Line a 7"x11" baking dish with parchment paper.
- Slice the Hawaiian rolls down the middle from the side. Place the entire bottom half on the baking dish and set the top half aside.
- In a small bowl, combine milk, egg yolks, heavy cream, and cinnamon.
- Brush the milk mixture on top of the rolls in the pan and set the mixture aside.
- Shape the sausage into 12 square patties about the size of one of the Hawaiian rolls. Cook sausage on medium-high heat until browned and cooked through.
- Place the cooked sausage patties on top of each Hawaiian roll.
- Whisk eggs, salt, and pepper in a mixing bowl until combined.
- Drain some of the sausage grease from the skillet and scramble the eggs in the same pan.
- While the eggs are cooking, follow the package directions to microwave the bacon.
- Scoop the eggs on top of the sausage and spread them out evenly.
- Once the bacon has cooked, place the strips on top of the eggs.
- Top the sliders with the other half of the rolls.
- Brush the milk mixture over the top of the rolls.
- Bake the sliders for 15-20 minutes, until the tops of the rolls are a golden brown color.
- Slice the sliders into individual rolls and drizzle with maple syrup.
- Serve while warm and enjoy!
Tips:
- Storage: Refrigerate sliders in an airtight container for 2-3 days.
- Make Ahead: Assemble sliders as directed, but hold don't brush the rolls with the milk mixture. Cover the baking dish tightly and refrigerate for up to 24 hours. When ready to bake, let the sliders sit at room temperature for about 30 minutes. Brush the rolls with the milk mixture, and bake as directed.
