3-Ingredient White Chocolate Thin Mints

Growing up, our neighbor always delivered a tray full of treats at Christmas time. One of my favorite goodies were these white chocolate thin mints. I never knew how she did it until I was much older, and now I make them every year with my own family. These White Chocolate Thin Mints are a no-bake Christmas treat that can be whipped up in minutes, and only requires 3 ingredients! Made with Oreo cookies coated in white chocolate and topped with crushed peppermint, these cookies are a family favorite. They're one of the easiest treats to make for Christmas parties or to share with your neighbors.


3-Ingredient White Chocolate Thin Mints

These White Chocolate Thin Mints only require 3 simple ingredients: Oreos, vanilla almond bark, and peppermint extract. Plus, of course, some crushed peppermints for topping. There's no baking required with this recipe, and it's so easy to make that even the kids can help!

The first thing to do is separate the Oreo Thins cookies. As their name states, they are thinner than regular Oreos, making them a little more brittle. So when separating, be extra careful to not break the cookies. Scrape the cream off of the cookies using a butter knife.

3-Ingredient White Chocolate Thin Mints

Melt the vanilla almond bark in the microwave in 30 second intervals, or a melt in a double boiler until smooth. Add peppermint extract to the chocolate and stir until combined.

Dip the cookies, one at a time, into the melted chocolate. The easiest way is to drop the cookie face-down into the chocolate, and then use a fork to gently flip it over. Lift the cookie and gently tap the fork on the edge of the bowl to remove excess chocolate, and then place the cookie onto the baking sheet.

Immediately top the cookies with crushed peppermint candies before the coating sets. This step is totally optional, but I love the additional crunch and peppermint flavor!

Let the chocolate coating set completely before serving. To make the process quicker, pop them into the refrigerator for 20 minutes. Once set, the thin mints are ready for eating and gifting.

  1. Line a baking sheet with parchment paper and set aside.
  2. Carefully separate the Oreo Thins and gently scrape off the Oreo cream with a knife.
  3. Break the almond bark into pieces and melt in a microwave-safe bowl in 30-second intervals. Stir well after each interval until completely melted and smooth.
  4. Add the peppermint extract to the almond bark and stir until combined.  
  5. Dip the cookies, one at a time, into the melted bark. 
  6. Use the fork to gently lift the cookie out the chocolate and place it on the baking sheet.
  7. Immediately top the cookies with crushed peppermint candies before the chocolate sets.
  8. Allow the coating to fully set at room temperature for at least 15 minutes or speed up the process in the refrigerator before enjoying.

Store: 

  • Store cookies in an airtight container at room temperature for 7-10 days, or refrigerate for up to 2 weeks.
