Ice cream is a staple in summertime, and this recipes is one of my favorite ways to enjoy it! These Oreo Strawberry Ice Cream Bars only need 5 ingredients, and takes just minutes to whip up. This refreshing dessert features a Golden Oreo crust, a luscious homemade strawberry ice cream filling, and topped with more Oreos and fresh strawberries. It's a perfectly sweet and tart treat that everyone will love!!

Oreo Strawberry Ice Cream Bars is such a refreshing dessert, and comes together so quickly! With only 5 simple ingredients, you can whip this recipe up for any occasion - even if that occasion is just a night in with your sweet tooth.

  • Fresh Strawberries - Strawberries freeze wonderfully in the ice cream, and are one of my favorite summer fruits. You could absolutely substitute (or add) any other types of berries with a tartness that freeze well.
  • Golden Oreo Cookies - You can actually use any flavor of Oreo cookies, but my favorites are the Golden Oreos and original Oreos. The sweetness of the cookies pairs beautifully with the tart berries.
  • Butter - You'll need butter to hold the crust of the ice cream bars together.
  • Heavy Cream - turn this into whipped cream for a light and fluffy ice cream.
  • Sweetened Condensed Milk - this creamy addition adds extra stability and sweetness to the ice cream base.

Crush Oreos (by hand, with a rolling pin, or by food processor) into fine crumbs. Combine the cookie crumbs with butter to create a crust that will support the ice cream bars and add a little extra crunch.

Pour the crust mixture into a 9x9 pan lined with parchment paper. Press the crust down evenly into the bottom of the pan, and then place into the freezer while preparing the ice cream mixture.

First, you'll need to make some whipped cream. Pour the heavy cream into a large mixing bowl, and use an electric hand mixer to whip the cream until stiff peaks form. Next, add in the sweetened condensed milk and mix until completely combined. Gently stir one cup of chopped strawberries into the ice cream mixture.

Remove the pan from the freezer and immediately pour the ice cream on top of the crust. Smooth the ice cream mixture out evenly over the surface. Freeze the ice cream bars for at least 8 hours, or overnight to allow the ice cream to completely harden.

Before serving, remove the pan from the freezer and top with coarsely crushed Oreos and chopped strawberries.

Lift the ice cream bars out of the pan using the ends of the parchment paper. Cut into 8 equally-sized ice cream bars. Serve immediately before they melt! If you have any leftovers, you can freeze the bars in an airtight container for up to 2 months.

Oreo Strawberry Ice Cream Bars

Servings: 8
Prep Time: 20 minutes
Chill Time: 8 hours

Ingredients:

  • 36 Golden Oreo cookies, divided
  • 6 tablespoons butter, melted
  • 2 cups heavy cream
  • ½ cup sweetened condensed milk
  • 1 ½ cups chopped fresh strawberries, divided

Directions:

  1. Line a 9x9 pan with parchment paper. and set aside.
  2. Use a food processor to crush 24 Golden Oreos into fine crumbs.
  3. In a mixing bowl, combine the Oreo crumbs with melted butter.
  4. Spread the cookie mixture evenly into the bottom of the prepared pan and press it down. 
  5. Place the pan into the freezer while preparing the ice cream mixture. 
  6. Use an electric mixer and a large mixing bowl to whip the heavy cream until stiff peaks form.
  7. Combine the sweetened condensed milk with the whipped cream.
  8. Stir in 1 cup of chopped strawberries.
  9. Pour the ice cream mixture on top of the crust and smooth it out.
  10. Coarsely crush the remaining 12 Oreos and sprinkle on top of the ice cream mixture.
  11. Freeze the bars for 8 hours or overnight.
  12. Before serving, top with the remaining ½ cup of chopped strawberries.
  13. Lift the ice cream out of pan and slice into 8 equal pieces to serve.

Storage: 

  • Freeze leftover ice cream bars in an airtight container for up to 2 weeks.
