These Fruity Pebble Baked Donuts have cereal baked right into the batter for a fruity-flavored treat!
Donuts are one of my favorite treats, and Fruity Pebbles are one of my favorite cereals. The two combined create a colorful, fun, and fruity-flavored treat that can be enjoyed any time of day! Like the name states, these Fruity Pebble Baked Donuts are baked instead of fried. This makes them come out soft, fluffy, and cake-like. They are packed with Fruity Pebble flavor thanks to cereal-infused milk and a crunchy cereal topping. You can enjoy the donuts any time of year, but the vibrant color makes them the perfect treat for parties!
To make a batch of these delightful Fruity Pebble Baked Donuts, you will need a few simple ingredients (full measurements and instructions are listed in the recipe below): Fruity Pebbles cereal (of course), buttermilk, oil, Greek yogurt, and your typical baking ingredients (eggs, flour, etc). You will also need a hand mixer or stand mixer, mixing bowls, and measuring cups and spoons.
Part of the magic of this recipe is the use of Fruity Pebbles-infused milk! Drinking the milk after a big bowl of cereal is my favorite part, so this extra step adds that nostalgic "Fruity Pebbles in milk" flavor to the donuts. The addition of the buttermilk itself also helps to make the donuts extra soft!
Lightly grease the donut pan to prevent the donuts from sticking. Filling the cavities of the pan is probably the toughest part. To make it easier, you can use a piping bag with 2A tip, or simply spoon the batter in. Fill each donut cavity about ¾ full of batter. Gently tap the donut pan on the counter to help get any large air bubbles out of the batter.
Bake the donuts for about 10 minutes or until the tops spring back when touched. Let them cool for 15-20 minutes, and then move donuts to a wire rack to finish cooling.
While the donuts are cooling, use this time to mix up the strawberry-flavored glaze. Combine all ingredients, except the cereal into a mixing bowl. For best results, add 1 Tablespoon of milk at a time until you reach the desired consistency.
Fruity Pebble Baked Donuts

Donut Ingredients:
- 1 cup Fruity Pebbles cereal
- ¾ cup buttermilk
- 1 ⅔ cup flour
- ¾ tsp baking powder
- ¼ tsp baking soda
- 4 Tbsp butter, melted
- ½ cup sugar
- 1 egg
- 2 Tbsp plain Greek yogurt or sour cream
- 2 Tbsp vegetable oil
- ½ Tbsp vanilla extract
Glaze Ingredients:
- 1 ½ cups powdered sugar
- 3 Tbsp milk
- 1 tsp vanilla extract
- 1 tsp strawberry extract
- 3 drops pink gel food dye
- 1 cup Fruity Pebbles cereal (for topping)
Directions:
- Preheat the oven to 350ºF and grease your donut pan. Set aside.
- Pour buttermilk into a mixing bowl and add 1 cup of Fruity Pebbles. Give the mixture a slight stir and set aside.
- In a large mixing bowl, combine flour, baking powder, and baking soda and mix until combined.
- Lightly whisk the egg, and add it along with oil, vanilla, Greek yogurt, and melted butter to the bowl with the cereal and buttermilk. Stir until thoroughly combined.
- Add the flour mixture, a little bit at a time, to the buttermilk mixture and mix until combined.
- Fill each cavity of the prepared donut pan about ¾ full.
- Bake for 10 minutes, or until the tops spring back when touched.
- Remove the donuts from the oven and allow them to cool in the pan for 15-20 minutes. Move donuts to a wire rack to finish cooling.
- While the donuts are cooling, Make the glaze. Whisk glaze ingredients together until smooth.
- Dip each donut top into the glaze and return to the wire rack.
- Immediately sprinkle Fruity Pebbles across the top of each donut.
- Allow the glaze to harden, and enjoy!
Tips:
- Storage: Store donuts in an airtight container, in a cool, dry area for up to 4 days.
Freeze unglazed donuts in the freezer for up to 3 months. Let donuts thaw, then glaze before serving.
