These chewy Strawberry Cake Mix Cookies are bursting with strawberry flavor!
To make a batch of these delightful Strawberry Cake Mix Cookies, you will need a few simple ingredients: cake mix, strawberry Jell-o, butter, cream cheese, and white chocolate. You will also need a hand mixer or stand mixer, mixing bowl, and measuring cups and spoons.
Use a hand mixer or stand mixer to combine cookie dough ingredients in a mixing bowl. Once mixed, the dough should be quite soft and red in color.
Use a cookie scoop to add balls of dough onto a baking sheet lined with a silicone baking mat. For soft and chewy cookies, be careful not to over-bake. Move cookies to a wire rack to cool completely.
While the cookies are cooling, melt white chocolate chips in the microwave. Carefully drizzle chocolate over each of the cookies in a zig-zag motion. If you don't want to use a piping bag, you can use a sandwich bag with the tip cut off, or a spoon to drizzle instead.
Strawberry Cake Mix Cookies

Ingredients:
- 17 oz box yellow cake mix
- 3 oz box strawberry Jell-o
- ½ cup butter, softened
- 4 oz cream cheese, softened
- 1 large egg
- 1 cup white chocolate chips
Directions:
- Preheat oven to 325º F.
- Line 2 baking sheets with silicone baking mats and set aside.
- In a large mixing bowl, add cake mix, strawberry Jell-o mix, butter, cream cheese, and egg.
- Use a hand-mixer on medium speed to mix combined.
- Use a cookie scoop to place balls of dough on a baking sheet 1 inch apart.
- Gently press the dough balls to about 1⁄2 inch thick.
- Bake for 12-14 minutes, or until golden brown.
- Remove the cookies from the oven and allow them to cool for at least 30 minutes on a wire rack.
- Melt white chocolate chips in the microwave. To prevent scorching, melt the chocolate for 30 seconds at a time, stirring in between each burst until the chocolate is completely melted.
- Drizzle melted white chocolate over each of the cookies using a piping bag or sandwich bag with the tip cut off.
Tips:
- Instead of a white chocolate drizzle, fold the white chocolate chips directly into the batter.
- Storage: Store cookies in an airtight container for up to one week.
- Freeze: Freeze cookies for up to 1 month. Stack cookies in an airtight container with a piece of parchment paper placed between each layer to prevent the icing from sticking to the other cookies.
- For perfect circle cookies: Right after removing cookies from the oven, place a mason jar lid ring, cookie cutter, or large glass over a cookie. Gently move in a circular pattern around the cookie, allowing it to reshape the cookie into a circle. This only works when cookies are still soft and fresh out of the oven!
