We absolutely love banana bread here at our house, but I am not a huge fan of complicated recipes. These easy banana muffins really are incredibly easy to throw together, and taste amazing plain or with additions like chocolate chips (our favorite), nuts, or other berries! So, next time you have some bananas starting to brown on your counter, whip up some of these muffins for your family. You won't be sorry!!
1 1/2 cups all purpose flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon salt
3 medium ripe bananas, mashed
1 egg
1/2 cup butter, melted

1/4 cup milk
1 tsp vanilla extract
1 cup chocolate chips

- Preheat oven to 350º.
- Mix the mashed bananas, egg, butter, vanilla extract and milk. In a separate bowl, mix the flour, sugar, baking powder, cinnamon, and salt together.
- Stir the banana mixture into the dry ingredients until just combined (do not overmix). Stir in chocolate chips.
- Fill muffin liners or greased mini loaf pan about 3/4 full. Sprinkle extra chocolate chips on top, if desired.
- Bake for 30-32 minutes, or until toothpick inserted comes out clean.
- Cool on a wire rack. Makes around 12 muffins.
