Who loves pancakes?! My daughter would eat pancakes and/or waffles for every meal if she had her way. Her favorite kind of pancakes are chocolate chip pancakes, topped with some peanut butter. Since they are requested so much at our house, I decided to share our easy and quick basic pancake recipe so that you can make some, too! Eat them plain, or add in whatever mix-ins you like (chocolate chips, blueberries, etc) to fit your tastes.
Ingredients:
1 cup flour
1 Tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
1 cup milk
2 Tablespoons oil
1/2 cup (or small handful) semi-sweet or milk chocolate chips
Directions:
1. In a bowl, mix together flour, sugar baking powder, and salt.

2. In a small bowl, combine beaten egg, milk, and oil.
3. Make a well in the center of the flour mixture and pour in the egg/milk mixture.
4. Stir until just combined. The batter will be lumpy.
5. Add in chocolate chips and stir until just combined.
6. Pour about 1/4 cup for each pancake and cook until golden brown. Top with peanut butter and maple syrup (sounds weird, but it's totally delicious!!).
Makes about 7-8 pancakes.
