I wish I had the patience and talent to make my Grandma's banana bread. I really do. However, that's not likely to happen anytime soon, so this is a great shortcut recipe with a similar result! I can't tell you how many bananas I have thrown away in my life because I was too lazy to make "real" banana bread. Now I can just throw these 3-4 ingredients together!
Ingredients:
Yellow Cake Mix
2 Eggs
3-4 Overripe Bananas
1/2-1 cup chocolate chips, nuts, etc. (optional)
- Smash bananas in a large bowl (I just mixed them in my KitchenAid)
- Add remaining ingredients and mix well. Batter will fill 2 small loaf pans, or one large loaf pan. Make sure to spray pans well with nonstick cooking spray and a little bit of flour.
- Bake at 350° for 35-40 minutes (bake longer if using larger loaf pan)
Tips:
- Freeze overripe bananas. Put them in a Ziploc bag (peel and all) and thaw when you're ready to use! They stay good for up to 3 months.
- Don't have a loaf pan? No problem! You can also make this recipe in a muffin tin, cake pan, or a bundt pan. Just be sure to adjust the cooking time accordingly.

just made tonight (after my husband pulled "sausages" out of the freezer for dinner and they were really bananas...). I added about 1/2 c of oil as on the directions... used different brand of cake mix. Made in muffin tin and cooked for 20-25 minutes. Turned out great! ReplyDeleteLove this! I do the same thing when I need something quick, except I had not thought of adding chocolate chips. (Although I am known to swirl in some Nutella.) My friends (the ones who say they can't bake) love this idea, and they've all got their kids and husbands fooled thinking that they are baking geniuses. So easy and reliable!

ReplyDeleteI'll admit, I'm a bit nervous about this. I just put it in the oven, and I'm sort of expecting it not to come out right. I only had the 'butter recipe' yellow cake mix, and when I mixed it up with the bananas it was dry and wouldn't bind. So I slowly started adding water, even though you let a few ladies know NOT to add the add'l ingredients on the back of the box. It REALLY seems like it needed the eggs though.. guess we'll see in 1/2 hr!! I also set aside a few muffin cups for my daughter then added pecans to the rest and put it in a loaf pan for us.

DeleteSo I did them and muffins! Yumm Yumm I just followed the directions for cooking time on the box and baked them for 19 mins they turned out perfect :) make sure you watch them in the end because I had to different types of muffin tins and one cooked faster than the other.

ReplyDeleteCan't wait to try this, as I'm a failure at homemade banana bread. I have to buy banana bread mix for the holidays:( Going to the store today so will be picking up bananas. Oh and a hint on freezing those overripe bananas...I take the banana and kind of squish it into a pint size zip lock bag, let all the air out, zip it, and smash the banana. Then mush it all around till it lies flat like a pancake, and freeze it. Makes thawing fast! and your banana is already mashed!

It would be so neater to be able to stack all those ziplocs in the freezer than having all the frozen loose bananas taking up space in the bottom of my freezer. I think it would even stop my husband from going on a 'if you don't use up all these bananas, I'm just going to toss them into the compost pile' rant!!!

ReplyDeleteI made it with a spice cake mix (not chocolate I know) but it worked out well. I just love the deeper flavor as compared to yellow cake mix. I can't see why you couldn't use chocolate. One thing is that with the spice mix I use a little more banana (more bananas or the ones that are really big because I want the banana to still come thru). I wonder if you want the banana flavor if you would want to use a little extra as well.

ReplyDeleteI love this! My dad is a diabetic so I changed up the ingredients a tad and used sugar-free yellow cake mix and sugar free chocolate chips and used a muffin pan also. I let my dad try it and he told me he loved it... THEN I told him it was sugar-free. =) The entire family loves it too. Thank you!

I didn't have yellow cake mix I had holiday confetti, added some vanilla and cinnamon and it was AMAZING! I also cooked mine in a bundt pan and it was done in 40 mins :)

ReplyDeleteI just got done making this bread!!! I used one egg instead of two, along with adding mini choc chips and crushed walnuts. I fed it to my boyfriend who rated it a 9.2 out of 10!!! ( I make him rate everything so I understand how much he likes something)... It's rare that he likes something soo much and was super excited about it!! I made them in muffin pan since that is all I had.

Made this today! Wonderful and SOOOO easy!!! I am so excited about it! I added 2 tsp vanilla extract, 1 tsp of cinnamon and I had a few extra blueberries as well. We have put all different kinds of fruit in them such as blueberries, strawberries and rasberries! We love adding chocolate chip in one batch and leaving them out in the other. I added 2 Tbsp. of ground flax seeds for a nutritional boost, used 1/2 c chopped pecans, and 1/2 c semisweet chocolate chips, and cooked in muffin tins - It made 18 perfectly sized muffins. So delicious, and satisfying... The kids wanted a second but were full after just 2! (That doesn't happen often in my house, as the sweet-tooth runs in our family!) Thanks for sharing!
ReplyDeleteThis bread is so good. I added Hersey cinnamon chips to it instead of choc chip. I also made one large loaf so it took a lot longer to bake than the directions say. I think I will make it this way from now on.

I greased the pan and dusted with sugar/cinnamon combination and put about 1/2 C of the cinnamon/sugar combo sprinkled on top. Delicious! ReplyDeleteIt came out so moist and just delicious, but all the chocolate chips sank to the bottom of the loaf pan I used. Maybe it's because I used only 2 bananas ( I had only 2.)and the batter wasn't thik enough to hold the chocolate chips in place ?

ReplyDeleteI have read all the comments and noone said they had a problem with theirs being to crumbly. I followed directions exactly, it came out of pan perfectly, however (ever after cooling a bit) I could not slice it, it would just crumble terribly, it tasted wonderful but cant get slices out of it. Maybe oil would have prevented this?
ReplyDeleteI baked this tonight and ended up having to leave it in for 1 hour. The middle just wouldn't cook through. I covered if with foil about 40 mins in to not burn the top. It was delicious though and tasted like homemade bread!

I made this last week and it was a total hit with everyone! I used 4 bananas, 2 eggs, and just walnuts (no chocolate chips). I was a little nervous about the cake mix because I was thinking it would taste too sweet, but it was amazing!!! This bread turned out perfect (that coming from someone who is not very talented in baking either) so simple and delicious. Next time I think I might add a little nutmeg though just to give it a little extra flavor.

ReplyDeleteI tried this last night, following the recipe, only I used the Betty Crocker GLUTEN FREE yellow cake mix and it turned out wonderful! I added 1/2 cup of applesauce as GF things tend to be incredibly dry. I made some of it into muffins (in paper) and some into mini loaves. Some of the muffins stuck to the paper but, I think they just needed to cook a little longer. The mini loaves came out perfectly. I will definitely be making this again! Thank you!! :)

ReplyDeleteHave this in the oven right now. I was a little worried I messed something up because my "batter" was kind of thick. Everything mixed well, it was just really thick and tough. Hope they turn out ok! Thanks for this recipe.
ReplyDeleteThis is exceptional! Made it without any nuts as my husband did not want the nuts. Thank you such a great recipe to whip up and eat within an hour. Licking the bowl was delicious too!

ReplyDeleteJust made it and it passed the hubby test with flying colors!!! I did add the oil per the cake mix instructions, as we like our cakes moist.

ReplyDeleteI made this for my painting group....added some coconut and diced up some maraschino cherries....those turned the batter a little pink, but the result was mdelicious and very moist. Thank you so much for sharing this recipe!
ReplyDeleteYou should peal the bananas before you throw then in the freezer bag. That way when you thaw them to use just squeeze the bag to mash them.

ReplyDeletehave mad this several times today I didn't have a yellow cake mix so I used chocolate sugarfree cake mix. It is outstanding, but really sweet if you put cool whip on it cut the sugar taste a little...a girl got to do what a girls got to do.
ReplyDeleteJust made this today with a few changes...used 1/2 C chocolate chips, 1/2 C peanut butter chips. Swirled in 1 T. creamy peanut butter after mixing all the ingredients and added a sprinkle of both types of chips to the top before baking. Delicious!

ReplyDeleteLove this recipe! I've made this several times now, but with sugar-free cake mix. I use chopped walnuts, and I even found sugar-free chocolate chips!!! My batter winds up a little dry, so I add one of my kids' applesauce cups (sugar free) to the batter. I cook in Bundt cake pan, and once cooled, put drizzle on top (Splenda mixed with canola oil and a dash of skim milk). Dee-lish!

ReplyDeleteI made this tonight and it was amazing! I added ~1/2cup chocolate chips and 1/2cup of peanuts. I used a large loaf pan and it was done in about 55-60 minutes. Just ate a slice with a big glass of milk :) Def making again.

ReplyDeleteIve made this with the yellow cake mix, the chocolate cake mix and right now in the oven I made it with BANANA cake mix! I can't wait to see how it tastes since the last two times i've made it it has been so good!!!! I can only imagine it tastes better with banana cake mix!
ReplyDeleteI made this on Saturday and it was delicious. I used 3 bananas and 2 large very ripe pears. I did wish I had put in some nuts but I did like it very much just using the basic recipe.
ReplyDeleteMade this with 1 can pure pumpkin instead of bananas and added pumpkin pie spice. Turned out great!
ReplyDeleteI just took this out of the oven. I used liquid egg whites instead of whole eggs and instead of chocolate chips, I chopped a bar of Lindt 90% Supreme Dark Chocolate. It smells amazing and based on the taste of the batter, it's going to be a big hit :) Thank you!

ReplyDeleteMade this exactly per the directions. My 6 year-old granddaughter happily did most of the work. The results were fantastic, far beyond my highest expectations. Easily our most successful baking project. Terrific results, both in taste and visually. So glad I came across this recipe! Wish I could post the photo we took of our bread (I don't know how to do that)!
ReplyDeleteOf all the Banana recipes I have ever made, my boyfriend (who did not know I used a cheat cake mix recipe this time) Loved it and said it was the best banana bread and muffins I ever made and to stick to this recipe! Then I told him the secret! I'm always trying new recipes to find one my son who has Autism will try, This is the one! I made him mini muffins, (he likes everything mini and bite sized) and he loved them! So this is now our Banana recipe, I've made it a few times now, and I'm making it again today! Thanks so much! ReplyDeleteOld post but made these today during quarantine2020 and they are delicious! I made 24 muffins, used 4 smaller bananas, 2 well ripened and 2 ripe, and mini choc chips. Baked at 350 for 18 mins and they are perfect!
