So, I opened up the freezer to see what I wanted to make for dinner and an idea literally jumped out at me. A package of bacon fell out of the freezer and almost landed on my foot. Apparently it was done living in the freezer... So what do you do with some chicken breasts you're not sure what to do with, and some suicidal bacon? Mix them together, of course!
So here is my "recipe" for some bacon wrapped chicken that I've made up. There's still room for improvement, and you can always add more ingredients, but I think it turned out surprisingly tasty! Not to mention it's pretty simple... Gotta love that!
Step 1: Start out with your chicken breast on top of a layer of plastic wrap, then another piece of plastic wrap on top.
Step 2: Then take out your anger and hit the chicken with your husband's hammer or a meat tenderizer. Be careful not to get holes in your chicken.
Step 3: Next, lay out some bacon on a plate. 2-4 pieces vertically, and 2 pieces horizontally (I used 4 because I was trying to use up the bacon). You can also substitute with turkey bacon.
Step 4: Lay your chicken in the center of the bacon. I also sprinkled a little bit of seasoning salt on the chicken. Mix together some cream cheese and garlic salt, or use the herb flavored cream cheese. Spread a layer of the mixture on the chicken, then add a little bit of shredded cheddar cheese.
Other filling ideas: Pepper Jack cheese, Monterey Jack cheese, Mozzarella cheese, jalapeños, green chilis, green onions, spinach, mushrooms, onion, and asparagus
Step 5: Roll the chicken up a little and fold up the horizontal pieces of bacon, making sure the sides are covered. then fold up the vertical pieces and secure with a toothpick if they won't stay.
Step 6: Lay the chicken seam side down on a greased pan. I just put mine onto some tinfoil on top of the pan and it worked great. You can bake as-is, or sprinkle a little bit of brown sugar on top for some sweetness.
- Bake at 400° for about 45 minutes, turning it over about halfway through.
- Then turn the oven up to 500° or broil (watch closely!!) to brown the bacon and make it crispy. *You can turn the chicken over again to make sure all the bacon is cooked.
This is also great without the bacon. Just cook for 35-45 minutes or until the juices run clear.
*If you cut open the chicken after all of this and the bacon still isn't cooked all the way through, you can put it back in the oven for another 15 minutes or so and it will be perfect!

DeleteThanks for this amazing recipe idea. I read through your comments and threw some of other peoples suggestions together. After I thinned out the chicken I sprinkled paprika, black pepper, and garlic salt right onto the chicken then I put some cream cheese down and topped it with pepperjack cheese and some green onions and wrapped the chicken around it. I was impressed that "I" actually made it because I usually don't fix anything fancy. However it was the best tasting chicken me and my guests have ever had. Then it was even better the next day for left overs because the flavors had more time to blend together. I will definetly be making extra as left overs because this is by far the best chicken ver and it wasn't that hard at all. I also used tooth picks to help hold it in place when I turned them over and I used a rack on top of a broiling pan so the air came up under and I didn't have to turn up the oven to crisp the bacon on top and I only had to turn it once half way thrown and after only one hour it was perfect.

DeleteI made this last night for dinner but I made it with turkey bacon only used 4 pieces per chicken, used low fat cream cheese and 2% cheese. Sprinkled Chicken with a little Tony's Chachere's seasoning(Cajun seasoning), and garlic salt. Made it a bit more on the healthier side. It was VERY good.

DeleteWe have a small grocery chain near us that makes a variation of this to bake. It has cream cheese and either swiss or mozarella (doesn't matter - just use your favorite)inside. They just spiral a couple of bacon slices around the breast and bake. I love it and agree with others - it's really great for leftovers. Looks good but I'd probably just do bacon one directon, the inner layer looks a little uncooked, I'm sure it is to temp but I don't like floppy bacon, definatly on my to try list though!

What a fabulous idea. I have to add that, while it was delicious as posted, I had some sun dried tomato cream cheese from Einstein Bagels, in my fridge and Oh My Goodness did it kick it up a bit. Thank you so much. My kids even love it.

Fixed this twice but I add jalapeño to cream cheese. Cut out cheddar cheese and added mushroom soup diluted another 15 minutes at end of cooking time. LOVE it!!!!

ReplyDeleteI made this and i seasoned the chicken breasts first, then I used cream cheese, pepper jack and some green onions. It was amazing, the only bad thing was because I never cook, no one believed that I pulled this off. They thought I bought them prepared at the store and just baked them. I had made them for my family and my friend's and it was the most amazing dinner I have ever made. Can't wait to fix them again. It's too tasty of a dish to be this easy.

ReplyDeleteI did a chicken recipe a few weeks ago that I had to use the whole chicken breast like this recipe. It turned out to be a very big piece of chicken considering all that goes in it. I decided then I would split the breast in half! And that is what I will do with this recipe as well. It lookes deliciious!

ReplyDeleteMade this last night and it turned out Awesome! Even if I forgot to add the shredded cheese. I seasoned the chicken with some pepper and granulated garlic and instead of cream cheese I substituted with the Philadelphia Savory Garlic Cooking Creme, about a Tablespoon and a half per breast. I got my Chicken breasts from the local Meat Market and they were HUGE, I was able to cut 2 in half and got my 4. Great Recipe!! Will definately do this again! Thank you!

ReplyDeleteThis is DEE LICIOUS! Cooked my bacon for a minute in the microwave first then wrapped it around the chicken and it cooked up perfectly. Cooked it for the listed 45min.. but could probably go less with the pre-cooked bacon.

ReplyDeleteI've been making a version of this for years. Mine differs in that along with the cream cheese (that I infuse with a little rosemary) I use a white horseradish cheese with some slivered red or orange sweet peppers, slivered onion, and sometimes some slivered carrots...depends what I have in the fridge. That little bit of veggies inside makes for a nice change. I also sprinkle a little brown sugar on top about 15 minutes before adding a light brushing of BBQ sauce on top that I finish under the broiler for 5 minutes under a watchful eye.

ReplyDeleteI love this recipe but definitely recommend some changes. I half cook the bacon before I wrap the chicken, I also don’t use as many pieces as she does. I cut my chicken in smaller pieces. Not extremely small but like the one she shows, I would cut that in half and wrap it in 2-3 pieces of bacon and don’t overlap the bacon other wise it won’t cook right. Also, you just need to cook the bacon for about 30 minutes and it’s good to go!
