Chicken & Rice

This recipe for chicken & rice is super easy, and doesn't take very long at all to throw together! You can add vegetables if you'd like, but we keep things simple at our house - mainly because my husband is allergic to all fruits & vegetables. Yep.

Here's what you'll need:
  • 1 can cream of chicken (or mushroom) soup
  • 1 1/3 cup water
  • 1 cup MINUTE rice
  • 1 packet Italian seasoning
  • chicken (you can use any kind of chicken. I use about 7-8 pieces of tenderloin just because that's what we usually have on hand)
  • 3/4 cup cheese

Cook chicken with a little bit of the Italian seasoning and then cut into bite-size pieces. While the chicken is cooking, I mix together the soup, water, seasoning, half of the cheese and rice in an 8x8 baking dish. Mix well, making sure all the rice is covered. Stir in chicken pieces and top with remaining cheese.

**If using instant/Minute rice, you do NOT have to pre-cook rice. Only pre-cook rice if it is regular rice since it may not completely cook in the oven.

Cover with foil and bake at 350º for 30 minutes, a little longer if cheese on top isn't melted.

I serve this in a bowl, just because it's easier when it's hot. It thickens as it cools, though, making it easier to cut & serve. Hope you enjoy! It's a family favorite at our house!

**You can also make this recipe "Mexican-style"! Just use taco seasoning instead of Italian seasoning!**

  29. Made this tonight for dinner. It was very good. I precooked my rice, didn't add the water, but around 1/2 cup of chicken broth and /4 cup sour cream..
    This was easy, yummy and it reminded me of comfort food.
    Btw- I just used a rotisserie chicken from grocery store to be even simpler..

  36. My housemates and I made a mexican version of this. We go to school in a super small town and the grocery store ran out of chicken breasts. So we used ground beef and taco seasoning. We also threw in some vegetables. I also added another 1/3rd cup of water to the recipe. So good!

  37. I love chicken and rice, but rice is one of my husbands least favorite starches so we don't eat it nearly often enough :( I love the addition of the Italian seasoning. It just gives it a little something extra. Have you ever tried this with ranch dressing mix? I am thinking that would be yummy too. Making this again for dinner tonight since we need some warm comfort food (yes in July!). Thanks for another great recipe.

  40. My family loves this recipe! I boil the chicken with an onion and mrs dash plus salt. I use the broth for the water and cut up the onions very small and add them too. I usually the chicken ahead of time. It's very tasty and super easy ❤

  41. Now that I have just made this for the umpteenth time, I thought should tell you how much we love it. I found it about a year ago after my husband had oral surgery. This was the first "real" food he could eat and we have been eating it ever since! This recipe is one of those rare finds that is perfect just as written. Don't change a thing!
