I love easy recipes. LOVE. This is a recipe I make pretty often. Even my husband, who is the pickiest eater EVER, loves it! Score.
So, here we go. Mexican Lasagna!
*Please note that you can add your favorite taco-ish ingredients into this recipe.
Let's just say my style of cooking is more... kid friendly (?)...
Ingredients:
Tortillas - 12 small or 4-6 large, flour or corn
1 can enchilada sauce
1 can refried beans
Hamburger - cooked, drained & seasoned with taco seasoning
Cheese
Any other ingredients you normally enjoy on tacos:
olives, lettuce, tomatoes, salsa, guacamole, onions, etc.
1. Pour small amount of enchilada sauce in 9x13 pan so the tortillas won't stick.
2. Layer 6 small tortillas in pan, covering the enchilada sauce.
3. Next, layer on refried beans, taco meat, cheese, then enchilada sauce. This is also when you would add other taco-ish ingredients.
4. Do one more layer of tortillas, beans, meat, cheese & sauce.
5. Bake at 350° for 30 minutes, adding a few more minutes if cheese isn't completely melted.
6. Cut, serve and enjoy!!
**I have also made this recipe with changes: flour tortillas (halved, 3 whole for each layer), chicken instead of beef, and added cooked rice to refried beans, sauce and cheese - DELICIOUS!!**

I sat down to make myself on of the covers the other day,but found my laptop has little sticky out bits where it closes, so your cover would have covered those. Bugger!! I'd started cutting- so I made myself a bag instead! Thanks for the inspiration!

Saw you posted this last week, and I put it on our menu calendar for tonight. Anyway, mine turned out slightly too spicy for my little guy (15 months old) but was perfect me and my husband! I did it a little differently than you described, only because I didn't have everything I needed. I'd love to post my version on my blog and link back to you. What do you think?

PS... I didn't even realize I cooked TWO of your recipes in the past 24 hours! When the recipes come in, I bookmark them, and at the time, I didn't pay attention to where they were coming from. Only when I started to cook tonight, did I discover it was once again your idea I was following!
I am definitely going to try this one. With three kids that all have their fussy moments it's great to find a recipe that is a bit more kid friendly! :)

This is one of my favorite things to make ever. Its so easy and lasts for a while. It freezes pretty well, too. Today I'm gonna try it with whole wheat tortillas and ground turkey. Yay!
